Artisanal’s in-house butchers purchase their meats and poultry from local sustainable and responsible farmers. They are members of and practice whole-animal butchering under the guidelines of The Butcher’s Guild, which promotes responsibility and sustainability in their craft. They use traditional hand butchery, resulting in a greater variety of unique cuts of meat and greater use of the animal. They also produce their own sausages and pates, and provide Artisanal’s kitchen with the meats used in Artisanal’s sandwiches, soups, and salads.
